It was a beautiful evening to have an outdoors dinner, although by dessert time, it was slightly chilly. The theme of the night was healthy BBQ, so I went with seafood - fish and shrimp. Luckily I had picked two entrees because as I was marinating the shrimp, I remembered that Lauren was allergic to them!
Everyone showed up with their delicious sides and dessert, and we moved outdoors and started with bruschetta and an albarino Spanish white wine picked up from Costco. I started grilling and both the fish and shrimp were quickly done in less than 20 minutes!
We decided to start the blog after we finished eating, so we had to fiddle with the leftovers to get some decent pictures. Unfortunately, the fish was mostly gone, so just the recipe below. The original recipe was for grouper, but I used tilapia instead.
Grilled Tilapia with Basil-Lime Pistou
Cappuccino Trifle
Ginger-Garlic Shrimp
Fiery Chipotle Baked Beans
Roasted Potato Salad with Mustard Dressing
Watermelon Feta Salad
